Every wonder how peanut butter was made?  Ever wonder what is the difference between peanut butter and peanut spread? During this talk, you will hear about all things peanut butter.  From how to truly define between the differences between the peanut butter products you have in your pantry…to the history of peanut butter brands.  In addition, you will understand how peanut butter is made from its growth in the fields, to the science of roasting and lastly, to the final product found in the jar.

 

About the Speaker

Chris Liebold obtained a Masters in Chemistry from the University of Kentucky in 2007.  Upon completing that degree, he wanted to combine his two passions: food and chemistry.  Thus, he set out to get a Ph.D. in Food Science from the University of Kentucky.  Under the tutelage of Dr. “Luke” Boatright, he completed his studies of meta-stable free radicals found in soy protein isolates and graduated in 2011.  In 2011, he began working in food industry where we worked on products ranging from coffee to peanut butter.  During that time, he worked variety of projects looking at the volatile chemistry of food products and used analytical instrumentation, such as LC-QTOF, LC-QQQ and GC-MS to so.  He has also earned his MBA from the University of Akron.
